This was a great change from the standard red sauced pasta recipes I usually prepare. Surprising chicken-y, citrus, sweet and tart flavors make this dish a new favorite for us!I did not have boneless skinless chicken, and it was snowy and slick outside, so I opted for the skin on and bone in thighs I had in the freezer. I baked the floured and seasoned thighs until almost doneness, and once they reached 160 degrees I placed them in the skillet of sauce to finish cooking. The skin was crispy and the flavors were great.Served abed a nest of angel hair pasta. White cupcakes to be frosted soon for dessert!

Big Soft Ginger Cookies.
We loved these warm, ginger spiced cookies! The inside is slightly chewy while the sugar crust gives just the right crispness to the bite. The were picture-pretty, too, with perfect crinkled tops. Will definitely make these again. It is a good recipe for a small household, too! (2 dozen large cookies)

Cream of Wheat® Pancakes Recipe.
This is my favorite pancake recipe, it is very forgiving if you adjust it or add to it (for variation we have at times added berries or vanilla) and the delicate crisp edge is perfection!
I was surprised this morning to find my farina was nearly all gone so I used Malt-O-Meal instead and the results were fabulous. Of course, most anything made with buttermilk is extra tasty!

Apple Pie by Grandma Ople.
I didn't have the ingredients for my "regular" apple pie recipe so I came across this one, which intrigued me because of its construction -- I had never considered pouring the saucy ingredients over the top crust. It turned out perfectly -- the top crust lightly glazed and golden, and the filling tender. There was no slumping and we enjoyed it -- every last bit! (I added extra cinnamon and nutmeg, sprinkled on the bottom crust with a smidge of sugar, just a little something my family favors.)

Almond Poppy Seed Muffins Recipe.
Somehow I missed seeing buttermilk in the ingredients list, but being one who never skips a beat while in the kitchen, I substituted 1/2 cup whole milk plus 1/3 cup of sour cream. Also I like a very hearty dose of almond so I used about double the almond extract. The results were fabulous! Light, tender and fragrant. Perfect for an early summer breakfast on a lazy Sunday morning, along with freshly sliced mangoes and a pot of Fig flavored tea!

Delicious, moist, slightly sweet and with the unmistakable flavor of freshly ground cardamom. We will definitely adopt this as a favorite. Turned out perfectly on our first try, when prepared without any modification to the recipe.

Buttermilk Pie II.
This pie turned out just fantastic and was a most delicious celebration of three of my favorite things--butter, sugar & buttermilk. Velvety smooth and set up perfectly. Out of habit, I sprinkled a little flour & nutmeg on the floor of the pie shell, and some nutmeg on the top of the custard before baking. So easy and so delicious!
